Just south of Tel Aviv, on top of a hill facing the ancient Mediterranean port sits the Jaffa hotel, a renovation project to admire. The School of the Sisterhood of Saint Joseph, a 19th century convent, was recently re-envisioned into boutique accommodation with the help of renowned British architect John Pawson and conservationist, Ramy Gill. Generations of patina was revealed during the renovation process, which Pawson brilliantly retained and juxtaposed with more contemporary elements.
